Citrus Cake

This is a delicious citrus cake that can be made using any citrus fruit you prefur. My favourite is always lemon!
For this recipe use 1 grapefruit/2 Oranges/ 3 Lemons
Ingredients:
Citrus Fruit
1 C Sugar
125g Butter
3 eggs
1 C Self-Raising Flour
3/4 C Plain Flour
Water (To top up)
Method:
1) Preheat oven to 180. grease and line cake tin
2) Grate cirtus rind into a food processor. Add sugar and process until well combined
3) Add butter and process till combined.
4) Add eggs one at a time processing in well after each egg
5) Add flours and citrus juice (top up to 1/2 C with water) process breifly until just combined
6) Pour into preped cake tin
7) bake for 35-50 mins. until cake is pulling aways from the sides of the tin and springs up when gently pressed.
