After many failed atempts at good chocolate cupcakes I found a cake recipe and adapted to cupcakes. Its great and I use it all the time now!

Ingredients:
2 1/4 C White sugar
1 3/4 C Plain Flour
3/4 C Cocoa
1 1/2 tsp Baking Powder
1 1/2 tsp Baking Soda
3/4 tsp Salt
2 Large Eggs
1C Milk
1/2 C Oil
1 tsp Vanilla Extract
1 C Boiling water
Method:
1) Preheat oven to 180 and Line cupcake tins
2) Mix togerther Sugar, Flour, Cocoa, Baking Powder, Baking Soda, and Salt
3) In the same bowl add the eggs, Milk, Oil, Vanilla, and mix gently for 3 minutes until well combined
4) Add boiling water and mix well
5) fill cupcake case 2/3 full
6) Bake for 30-35 minutes
NOTE: THIS MIXTURE IS EXTREMELY RUNNY. IT SHOULD HAVE THE SAME CONSISTANCY AS HOUSE PAINT
Ice with butter cream icing once completely cooled
