My go to: CupCakes!

I think this orignially came from womans weekly. i couldnt tell you how many of these cupcakes I have made but it must be nearing the thousand mark. they are a fave quick and easy recipe.

Ingredients:

125g Butter- Softened

1tsp Vanilla Extract

2/3 C Caster Sugar (regular sugar is fine too)

3 Eggs

1 1/2 C Self-Raising Flour

1/4 C Milk

Method:

1) Preheat oven to 180 and line cupcake tin with cases

2) Place all ingredients in a mixing bowl

3) Mix till combined

4) beat on high for 3 minutes or until paler in colour

5) Bake for 10-15 minutes unitl golden brown

Ice with you choice of icing when completely cool

For my neices birthday I iced these ones with vanilla icing and added some royal icing letters and gelatine balloons.
