Nanas Carrot Cake

My Nana was a lovely Canadian woman who always made me ginger crunch. She was an amazing baker. I'm not a fan of carrot cake but this makes a lovely moist cake that is gobbled up quickly in my house.

Ingredients:
1C Sugar
1 heaped tsp Baking Soda
1/2 tsp Nutmeg
2 C Grated Carrot
3/4 C Oil
1/2 tsp Salt
1 Heaped tsp Cinnamon
1 1/3 C Flour
3 Eggs
Method:
1) Preheat oven to 180 and grease and line cake tin
2) In a large bowl beat together Sugar and oil
3) Add eggs one at a time mixing well after each addition
4) Sift in dry ingedients and mix until combined
5) Add carrot and fold in
6) pour into cake tin and bake for 30minutes.
When completly cool ice with cream cheese icing
For cream cheese icing mix togehter equal amounts of cream cheese, butter, and icing sugar.
