Snickerdoodle Muffins

These are a yummy sometimes treat. They are more of a cupcake than a muffin but still very tasty.

Ingredients:

2 C Flour

2/3 C Sugar

2 1/2 Tsp Baking Powder

1/2 Tsp Salt

1/4 Tsp Nutmeg

1 Egg- lightly beaten

1 C + 2 Tblspn Milk

85g Butter- Melted

1 Tsp Vanilla

1/2 C Sugar

1/2 Tsp Cinnamon

30g Butter-melted

Method:

1) Preheat oven to 180 and line a muffin tin with cupcake cases

2) Beat together egg, milk, melted butter, and vanilla

3) in a separate bowl whisk together flour, sugar, baking powder, salt, and nutmeg

4) add dry ingredients to wet in two parts folding in until just mixed. DO NOT OVER MIX

5) Spoon into cases until 2/3 full and bake for 20-25 minutes until skewer come out clean

6) mix together sugar and cinnamon

7) Once muffins are completely cool brush the top of the muffin with melted butter then dip in cinnamon sugar.
