With a Twist: Potato Salad

This one came from my Sister-in-law. Amazing woman and chef. she threw in ingredients and it became one of my faves which i have remade many times. i don't have a photo of the completed dish yet but i will get one soon!

Ingredients:
4-5 Large Potatoes- peeled and diced
6-7-rashers on streaky bacon-diced
1/2 C Sundried Tomatoes-sliced thinly
1/3 C Mayonnaise
1 heaped Tsp Basil pesto
Method:
1) Boil Potatoes until cooked through but still firm
2) While potatoes are cooking fry bacon until crispy (adds a nice texture)
3) When potatoes are cooked drain of hot water and run under cold water till lightly cooled
4) Mix mayonnaise and pesto together in a small bowl.
5) place potato, bacon, and sundries tomatoes in a a bowl and gently mix together.
6) Add Pesto Mayonnaise to bowl and fold in until everything is coated.
7) Cover bowl and let refrigerate until cold.
This is great at a BBQ or just for some different potatoes with an everyday meal.
