Mums Fav: Lemon PoppySeed CupCakes

I made these for my Mum when she came for morning tea now she requests them!

Ingredients:

125g Butter- Softened

1tsp Vanilla Extract

2/3 C Caster Sugar (regular sugar is fine too)

3 Eggs

1 1/2 C Self-Raising Flour

1/4 C Milk

Rind and Juice of 2 Lemons

Method:

1) Preheat oven to 180 and line cupcake tin with cases

2) Cream together Butter, Sugar, lemon rind, and lemon juice

3) Add remaining ingredients and mix to combine

4) beat on high for 3 minutes or until paler in colour

5) Bake for 10-15 minutes unitl golden brown

Ice with you choice of icing when completely cool

These were for a baby shower I iced with vanilla butter cream and decorated white choc hearts with 100s and 1000s and a fondant start painted gold
