GingerBread Cupcakes

Gingerbread and Cupcakes are two of my favourite things so why not combine them!

Ingredients:

13/4 C Flour

1 Tsp Baking Soda

2 Tsp Cinnamon

2 Tsp Ground Ginger

1/4 Tsp Ground cloves

1/4 tsp Ground Nutmeg

1/4 Tsp Salt

115g Butter-melted

1/2 C Brown Sugar

1/2 C Golden Syrup

1 Large Egg

1/2 C Water

Method:

1) Preheat oven to 180 and line cupcake tin

2) Combine flour, baking soda, cinnamon, ginger, cloves, nutmeg, and salt and set aside

3) Beat together butter, brown sugar, golden syrup, and egg until smooth

4) Add 1/4 C water to butter and mix then add half flour mix and mix till smooth

5) Add remaining water and then flour and mix till smooth

6) Fill cupcakes cases 2/3 full with mix and bake for 25-30 minutes

These are tasty with a caramel icing.
