Old Fave: Shortbread

I absolutely love shortbread. Its buttery deliciousness

Ingredients:

500g Butter-Softened

200g Caster Sugar

500g Flour

250g Cornflour

Method:

1) Preheat oven to 160

2) Cream butter and sugar until light and fluffy

3) Sift in flours and mix gently until its binds

4) gently kneed dough until just smooth

5) Divide into 3 portions and glad wrap and refrigerate for 30 minutes

6) Start with one portion. roll out and cut into desired shapes.

7) Bake for 15-20 minutes. keep a close eye on them as you don't want them to brown.
