Tangy Lemon Slice

These is a delicious lemon slice. great when you need to take a plate as its a break from all the chocolate slices!

Ingredients:

125g Butter

1/2 C Icing Sugar

1 C Caster Sugar

1/2 C Lemon Juice

1 Tblspn Lemon Rind

2 Tblspn Cornflour

1/2 tsp Baking Powder

3 Eggs

Method:

1) Preheat oven to 180 and line slice tin

2) In a food processor blend together butter, flour, and icing sugar until it forms a soft dough around blades

3) Press into slice tin until even. bake for 15-20 minutes until lightly golden

4) Mix together caster sugar, lemon juice, lemon rind, cornflour, baking powder, and eggs until well combined

5) Pour carefully over warm base and bake for a further 25 minutes until set

Allow to cool in tin. When cool remove from tin slice and dust with icing sugar.
